Tosca Tosca, red wine by Château Juliette

Appellation: Côtes du Rhône Villages Laudun
Name of the cuvée: Tosca
Colour: Red

Yield: 32 Hl/Ha.
Age of the vines: 40 years
Soil: Predominately clay, sloping land surrounded by forests
Grape Variety: Grenache, Syrah (shiraz)

Harvest: Harvested and sorted by hand using small cases
Vinification: Every endeavour is made to allow nature to express itself to its fullest: each parcel is vinified separately in small vats. The syrah (shiraz) is fermented in small stainless steel vats using carbonique maceration. Manual crushing (pigeage) and pumping over takes place daily. Grapes are then pressed in the antique method using a vertical wooden press to extract the ultimate desired tannins.
Maturation: 20% is aged 3-6 months in French oak barrels

Wine analysis: 14.0%, 3.8 PH, 3.19g/L H2SO4

Degustation

Colour: Deep purple with dense ruby core
Nose: Intense complex notes of black fruits and red berries perfectly tuned with hints of liquorice and dark chocolate. Aromas emerge of sweet buttered toast. The aromas gain in the glass with aeration.
Palate: An expansive palate of many levels, rich and ropy with concentrated fruit of ripe blackberry, soft spices, rounded tannins and unique hints of dark chocolate and liquorice. Subtle oak aromas at one with the wine, with a bold finish of lingering complexity.

Food matches: Rich red meats such as lamb and venison
Recommended recipe: A traditional dish from Provence: Rack of Lamb roasted with a mustard, rosemary and thyme crust served with gratin of potatos and cepe mushrooms
Serving temperature: 18°C

Peak drinking age: Between 2 to 5 years from time of bottling. Wine will mature with age showing more characteristics of liquor chocolate, kirsch or black cherry jam.
